Psst. Do You Want to Know a Secret Supper Club? (New)

Just outside of the gates of Universal Studios,
lies a brand new secret supper club.

Located next door to the famous Larrabee Studios
home of the world's top artists, producers and mixers,
such as Michael Jackson, Alicia Keys, Madonna,
RollingStones, Lady Gaga, and Bruno Mars, just to name a few.

Behind this nondescript door, lies

What's INTRO you ask?

The space is part dining room and part art gallery.

The room opened in December 2016
and features different artists
on a rotating basis.

Who's behind this hot new supper club and art gallery?

Rob C (Left) is one of the three masterminds of INTRO
and was our host for the evening, along with
Executive Chef Paul Shoemaker (Right),
a Michelin-starred chef.

Along with Manny Marroquin, owner and multi Grammy Award
winning mixer/engineer of famed Larrabee Studios.

Our multi-course culinary adventure
is about to begin.

Here's some of the highlights,
dishes and menus will change
due to season and/or availability.

Edible Cocktails

(L) Oyster, Champagne, Beet Juice Caviar, and Passion Fruit Fizz
(C) Bourbon Cider Liquid Ravioli
(R) Cold Fever, a Gin & Tonic with silver and gold fizz

Cheers!

Not only did this Dime Bag
taste good, it also is a work of art

A Salmon Cone &
Salmon Skin Chicharron with Smoked Salmon Roe
and Crème Fraiche

Executive Chef Paul Shoemaker
introduced each course
and mentioned what the
inspiration was for each dish.

It's always interesting what
inspired chefs (or artists)
to create what is put on a plate,
there's usually a story.

Bone Marrow / Truffle Ravioli
with Parmesan Reggiano

Interesting combination,
who doesn't love truffles?

Scallop

with Baked Avocado, Yuzu Ponzu, Caviar, Smoked Sesame.

This was one of my favorites of the night.

Butter Poached Maine Lobster
with Coral Name, Basil Soil

Perfectly cooked lobster!

Variation of Red Beets

with Goat Cheese Crumbles, Mello, Candy Walnuts,
Whipped Goat Cheese, Beet Macaron, and Passion Fruit.

Lots of great textures

Pate A Choux Gnocchi

Smoked Maple Gel Pork Belly, Honey Poached Cranberries,
Pine Nut Soil, Pig Skin

Pasta with Truffles

Truffle Fondue, Espuma, and Fresh Truffle

Nuff said...

Monkfish

with Persimmons, Bottarga, and
a Cocoa & Ginger Reduction

Prime Hanger

Époisses, Potato Fondue, Potato Chip, Pistu, Sauce Bordelaise

Gold Mine

Passion Fruit, Macadamia, Strawberry Saffron Fluid Gel.

Dead Tree

with Gianduja Ganache, Brown Butter, and Chocolate Trees.

There was a great story that went along
with this dish.  All I'll say is this,
with the dead tree, there is life poking it's head out...

Thanks to Chef Paul Shoemaker
and staff for a wonderful dining experience.

It was a great evening,
something fun,
and very very delicious.

I've been to a lot of dinner parties and
supper clubs, but I have to say that
INTRO Art Gallery & Chef's Table
was one of the best.

The food was great, service attentive,
and a chance to meet others who share
an interest in art/food in a relaxed ambience.
Where in Los Angeles can you have all of this
with a multi-course dinner prepared by a
Michelin-starred chef???

INTRO

Chef's Tables are offered every Friday and Saturday night,
starting at 7:30 pm to about 10 pm.

Chef's Tables are great for special celebrations,
birthdays, anniversaries, etc.
