Coco Bread Sandwich with Jerk Chicken

Who Doesn't Like Jerk Chicken??? OK, I'm Sure There Are Some, A Few, One, Maybe Two... This is Maybe My  Favorite  Sandwich! At least the one I think about when wanting  a great 'Sandwich'  comes to mind. Chef Yonette serves this sandwich as an every so often special at her restaurant, Caribbean Gourmet in San Gabriel, CA. The sandwich consists of Jerk Chicken and a Slaw for texture and balance on a house-made Coco Bread, a buttery soft circular flat bread (aka "Butter Flap" in Guyana) Like most awesome sandwiches, it's the bread that makes it great. As I pick-up my sandwich on Sandwich Saturday. Whenever I pick up pastries or patties from Caribbean Gourmet, it's very hard to make it home. Smelling the Jerk Chicken... See What Jay Eats... Cupcake Wars and the Hawai'i Food and Wine Festival

"Aloha Cupcakes" While attending the 2012 Hawai'i Food and Wine Festival's "Cuisines of the Stars:  A Magical Journey of Food and Culture" I was surprised to find out, I'd be enjoying part of "Cupcake Wars" Yes, that Cupcake Wars ! With my event ticket, I was  ready to eat! Aulani, A Disney Resort and Spa and JW Marriott Ihilani Resort and Spa at Ko Olina served as venue hosts See What Jay Eats... As you enter the festival grounds, (I mean, beach) you can't miss the   Hawai'i Food and Wine Festival / Cupcake Wars show piece That and the camera crew too... The festival was set-up on the beach at the Aulani and Ihilani. Lots of great chefs and incredible food! So many chefs from Southern California  participating at this event,  I felt at home. WHAT? Yes,  No Sushi Chef Required! It's been about 7 years since I last looked at sushi robots and I'm sure the technology has improved vastly since then.   I was invited to see some of the latest sushi robots at Suzumo International Corporation, one of the handful of companies producing such equipment.  Suzumo's tagline is "We Love Rice" and after seeing their robots in action, I can see why.   Being trained in sushi, there are many factors that can affect the final sushi piece.  The main factor is the rice, it can be overworked and starchy or the grains smashed together.  The rice in sushi should be individual grains and not packed too tight. Breadfruit has been a vital crop in the Pacific for over 3,000 years. The tree grows throughout the Pacific Islands, except for New Zealand and Easter Island. With more than 80% of the world's hungry live in tropical and subtropical regions, could this be a viable food source? Breadfruit or 'ulu (in Hawaiian) Breadfruit trees grow easily in a wide range of areas with little care. Within 3-5 years, trees begin to bear fruit.
