Maui Restaurant: Market Fresh Bistro



If you want good food, you go where it's produced, the farm! Market Fresh Bistro is located in Maui's Upcountry, within walking distance of where some of the food is grown. MFB is headed by Chef Justin Pardo, who's vision is to use all Maui grown ingredients.

On this night, we were treated to a special multi-course tasting menu. Chef Justin prepared and plated all of the dishes and personally explained each dish. I knew we were in for a special evening.

In January 2012, Chef Justin Pardo prepared dinner for Maui's Outstanding in the Field at Kupa'a Coffee Farm. Outstanding in the Field, the California-based "restaurant without walls" stages outdoor dinners with the intent to re-connect diners to the land and introduces them to local farmers. When you hear Chef Pardo talk about the ingredients used in each dish, you get his passion for the locally grown products and understand why he was the right fit to cook for this Outstanding in the Field dinner.

I've been to Tsukiji Fish Market in Tokyo, the world's largest seafood mart. I've had seafood at Tsukiji so fresh, it's still moving. It's amazing when you have food the way it's supposed to be, straight from the farm.

It was amazing and will have to be back
for breakfast...
