Honolulu Restaurant: The Whole Ox

This restaurant closed September 2013

My Honolulu friends were telling me about this chef who was raising money for a new slow food restaurant he was building in Kaka'ako . As someone who's worked with a lot of restaurants, I wanted to follow along with the progress. As my trip to Honolulu trip was getting closer, I was hoping that the restaurant would be open by the time of my arrival.

The day before I arrived, I got word that the restaurant opened to rave reviews and a long line. Of course I wanted to go and so did some of my Honolulu friends. So I met up with @NctrnlBst @Melissa808 @RickNakama and @KelliNakama for breakfast.

A Great Space...

Menu is on the chalkboard behind the counter

I love restaurants that do their own butchering, cure their own meats, grind their own patties, make their own sausages, and use locally grown meats. The Whole Ox is a snout to tail restaurant that uses every part of the animal...

LUNCH!
From 11 am - 3 pm

Although we were there for breakfast, I had to go back for lunch, cause the sandwiches looked so good. So before I headed to Maui, I stopped in for lunch. By this time, the line wasn't out the door, but was still crowded.

BBK
Smoked pork and cucumbers

Smokey Asian flavor

Dry Aged Burger
Caper aioli and red onions

One of the best burgers I've had on Oahu!

Chef Bob shared his method of preparing
the patties for this burger.
Not sure if I can share it with you,
so I won't...
