Around the world, there are different types of fried food Tempura from Japan This style of cooking actually came from the Portuguese who established missionaries in the southern part of Japan. Of course the Japanese made it their own by making it very light and crispy without being greasy. Here's a simple Tempura batter recipe that you can make at home: 2 egg yolks 2 cups of ice water 2 cups of sifted flour *I like to add in some potato starch - just alittle Mix the ingredients together, but don't over mix or use a hand-mixer. Recipe: Ahi Masago Poke - May 2012

Where do you get good poke in Southern California? If there is a place, I haven't found it yet. I'm really picky when it comes to poke, so I make my own. Having competed in the Sam Choy Poke Festival on the Big Island in 2003, I got to try all kinds and some with imitation crab and tofu. But, I prefer the simple kine, like in my Ahi Poke recipe. Ahi Masago Poke This is my version of Alicia's Market "Wasabi Ahi Masago Poke" Alicia's Market is my first stop in Honolulu after I leave the airport. Ahi Poke

Spending lots of summers in Hawaii, one of the dishes that I most looked forward to was Poke. Everyone has their own special recipe, but I like the simple ones that highlight ahi, esp since my grandmother knew I love tuna. Here's a quick Ahi Poke recipe that I use: 2 lbs. Sashimi Grade Yellowfin or Bigeye Tuna 1 pc Octopus 1/4 Maui Onion (or any sweet onion) 3 stalks Green Onions 4 TBS Soy Sauce Dash chili oil Hawaiian Salt to taste Cube tuna and octopus into bite size pieces and add to bowl. Slice Maui Onion and chop green onions and add to bowl. Add soy sauce, chili oil, and Hawaiian Salt. Refrigerate before serving. If too dry, add more soy sauce. Remember to keep it cold and enjoy... Please Note: Wild Bluefin Tuna was NOT used in this dish. Photos and recipe by Jay Terauchi Jay Eats Worldwide © Jay Terauchi
